butter

sugar

buttermilk

milk/lemon juice mixture
(add 1 tbsp lemon juice or vinegar to a 1 c measure, and fill the rest with milk to make 1 c lemon juice/milk)

baking soda

cornmeal

Instructions
Preheat oven to 375. Prepare a 9x9 or 8x8 pan with cooking spray.
In a large microwave-safe bowl, melt butter. Stir in sugar. Add eggs and mix until well blended.
Combine buttermilk (or milk/lemon juice) and baking soda, then stir into bowl.
Add cornmeal, flour, and salt and mix until few lumps remain.
Spread into prepared pan and bake for 30-40 minutes; or until top is golden brown and a toothpick inserted into the center comes out clean.
