Tamale Pie

Ingredients
  

  • 1 box corn muffin mix such as JIFFY
  • 1 large egg
  • 1/2 c. sour cream
  • 1 14 oz can creamed corn
  • 1 tbsp. extra-virgin olive oil
  • 1 onion chopped
  • 2 tsp. ground cumin
  • 2 tsp. chili powder
  • 1/2 tsp paprika
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp garlic powder
  • 1 lb. ground beef
  • 1 can black beans rinsed and drained
  • 1 can corn drained
  • 1 14 oz can red enchilada sauce
  • 2 c shredded cheese Colby Jack, Cheddar, Monterey Jack, Pepperjack, or any combination

Method
 

  1. Preheat oven to 400°. Grease a 9x13 pan with cooking spray
  2. In a large bowl, whisk together corn muffin mix, egg, sour cream, and creamed corn. Pour into prepared pan and bake for 20 minutes.
  3. Meanwhile, in a large skillet over medium heat, heat oil. Add seasonings and cook until soft, 5 minutes. Add ground beef and cook, breaking up the meat, until no longer pink. Add black beans, corn, and enchilada sauce.
  4. Pour over cooked cornbread. Top with cheese.
  5. Cover with foil and bake until cheese is melted, about 20 minutes. Remove foil and cook until cheese turns golden, about 5 minutes.
