Pizza Lasagna

Ingredients
  

  • 16 oz Italian Sausage
  • 1/2 red onion diced
  • 2 bell peppers diced
  • 8 oz mushrooms sliced
  • 2 15 oz cans tomato sauce
  • 12 oz can tomato paste
  • 1.5 tbsp Italian seasoning
  • 1 tbsp oregano
  • 1 tsp garlic salt
  • 1 tsp onion powder
  • 1/2 tbsp garlic powder
  • 1/2 tsp pepper
  • 1 c water
  • 1 box no-boil lasagna noodles
  • 1 bag pepperonis
  • 2 1/2 c shredded mozzarella cheese
  • 1/2 c shredded parmesan cheese

Instructions
 

  • Preheat oven to 350.
  • In a deep skillet, brown Italian sausage (removing casings if necessary). Add onion, peppers, and mushrooms and cook until soft. Add tomato sauce and paste, water, and all seasonings. Simmer for 5 minutes.
  • Prepare a deep 9x13 pan with cooking spray. Spread 1 cup of sauce on the bottom. Lay noodles in one layer, breaking noodles to fit if necessary. Spread 1/3 of the sauce on top of the noodles. Layer 1/2 of the pepperonis on top. Sprinkle 1 cup of mozzarella cheese over pepperonis. Repeat layer: Noodles, 1/3 sauce, 1/2 pepperoni, 1 cup cheese. Add one more layer of noodles, topped with remaining 1/3 of sauce. Top with remaining mozzarella cheese and parmesan cheese.
  • Cover dish in foil. Bake for 30 minutes. Remove foil and bake for 15 more minutes.

Notes

Feel free to add or omit vegetables to your tastes! You could add black olives, artichoke hearts, spinach... Whatever your family will enjoy. I will caution that the bell pepper flavor is fairly strong, so if your family doesn't enjoy peppers, skip them!
