One Hour Dinner Rolls

Ingredients
  

  • 1 cups water
  • 2 tablespoons melted butter
  • 1/2 cup milk
  • 2 tablespoons honey
  • 1 tablespoon active-dry yeast
  • 3.5-4.5 cups all-purpose flour
  • 1 teaspoon salt
  • 2 tablespoons melted butter for brushing on top

Instructions
 

  • Preheat the oven to 400°F. Prepare a 9x13 baking dish with cooking spray.
  • In a microwave-safe bowl, stir together the water, milk, butter and honey. Microwave for 1 minute, and stir. Continue microwaving in 30 second intervals, until butter is completely melted and temperature is warm but not hot. It should feel warm, but not so hot that you need to immediately pull your finger out.
  • Pour the liquid mixture into the bowl of a stand mixer. Sprinkle the yeast over the top and give it a quick stir. Let sit for 5 minutes, until the mixture is foamy. If the mixture doesn't foam, start over! Your water was likely too hot.
  • Add 3.5 cups of flour and salt, and mix on medium speed until fully mixed.
  • On medium-low speed, continue adding flour until the dough cleans the side of the bowl. Knead in the mixer on low for 5 minutes.
  • Transfer dough to a lightly greased bowl and cover with a towel and let rise for 20 minutes.
  • Gently punch the dough down. Divide into 15 equal pieces and roll each piece into a ball. Place in the prepared 9x13 dish, and let rise for another 15-20 minutes.
  • Bake for 15-20 minutes, or until the rolls are golden brown on top.
  • Remove rolls from the oven and immediately brush the tops with melted butter. Serve warm! If serving later, warm for 15 seconds in the microwave.
