Caeser Dressing

Ingredients
  

Caeser Dressing

  • 1/2 c plain greek yogurt
  • 1/2 c mayonnaise
  • 1 1/2 tsp anchovy paste
  • 3 cloves garlic or 1 tsp garlic powder
  • 1 1/2 Tbsp olive oil
  • 3 Tbsp lemon juice
  • 1 1/2 tsp Dijon mustard
  • 1 Tbsp Worcestershire sauce
  • 1/2 tsp freshly ground black pepper
  • 1/4 cup finely shredded parmesan cheese
  • Salt to taste

Homemade Croutons

  • 1 loaf crusty bread cut into 1/2-1 inch cubes
  • 3 tbsp olive oil
  • 2 tsp Italian seasoning
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp pepper

Instructions
 

Caeser Dressing

  • Combine all ingredients and whisk until smooth. Store in airtight container in fridge for up to 2 weeks.

Homemade Croutons

  • Preheat oven to 375. Prepare a baking sheet with cooking spray or parchment paper.
  • Place bread cubes into a large bowl. Drizzle with olive oil and toss. Sprinkle seasonings on and toss gently until combined.
  • Spread onto baking sheet and bake 15-20 minutes, flipping once.
  • Remove from oven and cool completely. Use immediately or store in a covered container for up to a week.

To assemble salad

  • Toss lettuce in dressing until evenly coated. Add shaved parmesan and croutons and toss. Top with grilled chicken, salmon, or shrimp, if desired.
