Marshmallow Caramel Popcorn

I have some exciting news for you. Did you know, at this moment, you are only 5 minutes away from sticky, glorious, gooey, caramelly popcorn?? No candy thermometer or stove top required.

It’s not too good to be true. It’s just too good.

It was on my to-do list to remake this popcorn and take better photos. My husband came home from work and saw that I’d checked off “make and photograph marshmallow popcorn” on my to-do list and then ransacked the kitchen searching for the finished product. He was devastated to learn that we’d shared the whole bowl with our neighbors, and not a solitary morsel of marshamallowy goodness remained.

Luckily for him, and unluckily for my pants button, I had another batch ready for him in 5 minutes. It’s magical, my friends.

Marshmallow Caramel Popcorn

Ingredients Method Notes

Ingredients
  

  • 1 bag microwave popcorn
  • 1/4 c butter
  • 1/4 c brown sugar
  • 1.5 c mini marshmallows

Method
 

  1. 1. Pop popcorn and remove unpopped kernels. Pour into a large bowl.
    2. Combine butter, brown sugar, and mini marshmallows in microwave safe bowl. Microwave for 30 seconds at a time, stirring after each time, and repeat until the mixture is fully melted and combined. 
    3. Pour marshmallow mixture over popcorn and stir until evenly coated. Enjoy immediately or save any leftovers in a covered container for up to 2 days. 

Notes

For a slightly less sticky and indulgent version, pop more popcorn to spread out the caramel.
