Golden Grahams S’mores Treats

Everything I love about a Rice Krispie Treat combined with everything I love about S’mores (and s’more s’mores) in a perfect marriage of the ultimate summer dessert. Gooey, chocolatey, graham cracker-y, and ridiculously delicious

It’s hot, you guys. We did not have air conditioning in our last home, and it was non-negotiable for me in the house we live in now. Being hot makes me so angry, and I see air conditioning as a mental health investment. But even with our air conditioning, I do not want to turn our oven on in the summer.

When I am hot, I am grumpy. I am also grumpy when I don’t have any good treats. So it’s really in everyone’s best interest to have an arsenal of oven-free desserts to bust out on these hot summer days.

Or really, anytime. There is not a time or temperature in the world where these Golden Graham S’mores Treats wouldn’t call my name.

Golden Graham S’mores Treats

I took my absolutely perfect Rice Krispy Treat recipe and swapped a few things around to create these magical little treats. I’ve made rice krispy treats with Golden Grahams before, but they weren’t never quite as good as I wanted them. Luckily, I am committed to my s’mores craft, and I was determined to make them perfect.

A few things really knock these out of the park. First, start by crushing some of your cereal. This is sort of a “glue” to the treats, and prevents them from being overly crunchy and dry. Just take several handfuls and crush them into small pieces in your hands.

To get melty chocolate on the inside, with distinct chocolate chunks, stir in chocolate chips as you stir in the hot marshmallow mixture. Then top with pieces of Hershey’s chocolate pressed into the tops of the bars.

I also stirred in some of these marshmallow bits, for an added little crunchy bite of marshmallow flavor, but they are absolutely delicious without them too.

I’ve never met a S’mores I didn’t like, and with no campfire or smokey hair required, these Golden Graham S’mores Treats are sitting pretty as one of my favorite treats ever.

Golden Graham S’mores Treats

Ingredients Method

Ingredients
  

  • 6 tbsp butter
  • 2 10 oz bags mini marshmallows divided
  • 10 c Golden Graham cereal
  • 1/2 c chocolate chips
  • 1/2 c marshmallow bits optional
  • 4 fun size Hershey’s Chocolate bars broken into segments

Method
 

  1. Grease a 9×13 pan with cooking spray
  2. Using your hands, crush 3 cups of the Golden Graham cereal into a bowl. Add remaining cereal to the bowl.
  3. In a saucepan over medium heat, melt the butter. When the butter is melted, stir in 1 1/2 bags of mini marshmallows. Stir until barely melted.
  4. Pour marshmallow mixture over cereal. Quickly add chocolate chips, remaining mini marshmallows, and marshmallow bits, if using. Stir gently until evenly mixed.
  5. Press mixture into pan. Top with segments of Hershey bars, pressing gently into the bars so they will adhere. Allow bars to completely cool before slicing and serving.
