Dark Chocolate Oreo Cookies

June 7, 2019 by amyreeves24@gmail.com 4 Comments

Deep, dark chocolate cookies, studded with dark chocolate chips and crumbled oreo cookies. Fudgy and dense, and swirled with cream cheese frosting. These are the best cookies I’ve ever made. Total showstopper.

What else can I even say about these cookies? Let’s find out, because as always, I have a lot to say.

My brother is getting married to his absolutely adorable, gorgeous, smart, hilarious and amazing fiancé this week! I am SO happy for them! She is truly a gem. I love so many things about her, not the least of which is that she loves amazing food.

We share a deep and abiding love for cookies. Specifically, cookies from Crumbl. This blessed institution has just recently graced Colorado with its presence. My heart (and my jeans) are bursting with love for their warm and gooey cookies.

All of their cookies are like crazy town delicious, but their Oreo cookies speak love and happiness directly to my soul. The first time I tasted one, I knew immediately that I absolutely needed to duplicate them. I studied them intensely. And by studied them, I mean ate them. But also studied. I pondered their texture and flavor and how best to create such bliss in my own kitchen.

To really nail it, these cookies needed to be:

  1. Huge. Big fat cookies, that are thick and sturdy, but still soft and gooey.
  2. Deep, dark chocolate. I am not really a dark chocolate fan, but I knew these needed an intense chocolate flavor to match the cream cheese frosting.
  3. Gooey. These needed to be full of oozing chocolate, soft and chewy, but still sturdy enough to hold on to without falling apart.
  4. Oreos. In them. On them. Just the essence of Oreo all over the place.

It was a tall order. But I don’t shy away from challenges. And not to toot my own horn but TOOT TOOT, I freakin’ nailed it.

You can eat these without the frosting, and they are completely delicious in their own right.

But why? Swirled with cream cheese frosting and sprinkled with more Oreos, these are show-stopping, heart-stopping, jaw dropping beauties. I can’t get over them. I’m already making them again tomorrow for company. And I predict that everyone who eats one will propose to me. Sorry Uncle Steve; I’m flattered, but the answer is no.

Ingredients Method Notes

Ingredients

  • 1 cup (2 stickcold butter cut into tablespoon-size pieces
  • 1 cup lightly packed brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs cold from the refrigerator
  • 1 teaspoon vanilla extract
  • 2.5 cups all-purpose flour
  • 1/2 cup dark or Dutch-process unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 c dark chocolate chips
  • 1.5 c crushed Oreo Cookies divided
Cream Cheese Frosting
  • 1/2 c butter softened
  • 8 oz cream cheese softened
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 4 cups powdered sugar

Method

  1. Preheat the oven to 375 degrees Prepare cookie sheets with cookie spray or parchment paper.
  2. In the bowl of a stand mixer fitted with the paddle attachment, add the cold butter, brown sugar and granulated sugar. Start the mixer on low and gradually increase to medium speed. Mix for 4-6 minutes until the mixture is creamy and very well-combined, scraping down the sides and bottom of the bowl as needed.
  3. Add the eggs and vanilla and mix until combined and the batter is light in color, 2-3 minutes.
  4. Add the flour, cocoa powder, baking soda and salt. Mix on low speed until the dough starts to come together.
  5. On low, mix in the chocolate chips and 1 cup of the crushed Oreo cookies.
  6. Scoop large bowls of dough (about 1/2 and place several inches apart on the prepared baking sheets. Lightly press down each ball to flatten slightly. Bake for 9-10 minutes until set on the outside but still soft in the middle.
  7. Let the cookies rest on the baking sheets to cool for 5-7 minutes before removing to wire rack to cool completely.
  8. Fill a piping bag with the frosting and use a round tip to pipe in a spiral pattern on top of the cooled cookies. Or, you can just spread the frosting on top with a knife. Sprinkle with remaining 1/2 cup of crushed Oreo cookies.
For the Frosting
  1. In the bowl of a stand mixer or a large bowl with a hand mixer, cream butter and cream cheese until smooth. Add salt and vanilla extract. Add powdered sugar, 1 cup at a time, mixing thoroughly with each addition. After all powdered sugar is combined, mix on high speed for 2-3 minutes until frosting is smooth and fluffy.

You definitely nailed it with this recipe! I love a good, from scratch, soft and chewy Oreo style cookie😋 And even better that you don’t sandwich them, because there’s more to go round that way, and in a household of 9 that’s a big deal😉
