Chuy’s Creamy Jalapeño Dip

A cardboard box would taste amazing covered in this creamy, fresh, flavorful dip. The pickled jalapeños make the dip perfectly tangy without being too spicy, it’s bursting with fresh cilantro and lime flavor, and it is SO completely addicting.

I’ve been trying to eat healthier lately. This may not be evident judging by all of these recent treats, but it’s about baby steps, okay?

I’m passing on desserts that aren’t worth it, eating more salads, and trying to stop stealing my kids’ goldfish.

But the one area where I have absolutely no self control and any ambitions of fitting in my jeans go flying out the window? Chips and salsa. Specifically, chips and salsa at Chuy’s, my favorite Mexican restaurant. I don’t want to eat a couple of chips and then sit back and wait for my entree to arrive. I want to eat chips and salsa until I am too full for my entree. Which I will eat anyway, obviously.

At Chuy’s, their salsa is fantastic. But before the server can even say their name, I practically scream, “PLEASE bring me the creamy jalapeño now. Just save us all some time and bring me a whole pitcher.”

I was tired of making servers at Chuy’s uncomfortable, and decided I needed to know how to make this heavenly dip at home. I scoured probably 30 copycat recipes on the internet, and went to work, tweaking and adjusting until it was absolutely perfect.

And it is, my friends. It is absolutely perfect. I’ve been eating it all week on salads, eating it with chips, dipping southwest chicken wraps (coming next week!), and only barely refrained from just putting a straw in the container and drinking it.

I’m not overhyping this, guys, I promise. It’s SO stinking good. If you don’t like cilantro, my only suggestion for you is to ponder your life choices and make better ones.

Chuy’s Creamy Jalapeño Dip

Ingredients Method

Ingredients
  

  • 1 c sour cream
  • 1/2 c mayonnaise
  • 1 packet ranch dressing seasoning mix
  • 1/4 tsp garlic powder
  • 1/2 c chopped cilantro tightly packed
  • 1/2 c pickled jalapeño slices with the juice
  • 2-3 limes juiced

Method
 

  1. Combine all ingredients in a high powdered blender. Blend until smooth. Taste with a chip and add more cilantro, jalapenõ, or lime as desired. Serve as a dip for chips, sauce for any Mexican food, and salad dressing.

    This tastes sooo close to the original! This is awesome since we don’t live near a chuy’s! We used it as a salad dressing one night, on nachos the next night, and then still snacked on it the next day! Already looking forward to making my next batch!

        Yes, the creamy jalapeno dressing at Chuy’s is the best! However, Chuy’s is NOT a Mexican food restaurant. It IS a TexMex food restaurant, born in Texas. There is a difference between the two!!
