Alicia’s Salsa

This salsa is a staple for any get together. Fresh and amazing flavors, and completely addicting!

My best friend is from a big huge family. I have so many memories of sitting around her kitchen table with various siblings and friends wandering in and out; everyone digging into a huge bowl of this salsa. Her oldest sister Alicia made the salsa, and it forever be known in my mind as “Alicia’s salsa.” Anytime there was any gathering, this salsa was on the table. And I would always make sure I was seated directly in front of it.

Nothing like a big bowl of salsa and plenty of chips for great conversations and memories to start flowing. Gathering with friends and family and snacking on delicious food is truly my love language.

Bring this salsa to your next get together! I can’t guarantee that the people sharing your table are as awesome and fun as my people, but I can guarantee that this salsa will make any gathering even better.

Alicia's Salsa

Ingredients Method Notes

Ingredients
  

  • 2 cans black beans rinsed and drained
  • 2 cans corn drained
  • 1 red onion finely diced
  • 3 ripe avocados diced
  • 5-6 roma tomatoes insides scooped out and diced
  • 3 limes juiced
  • 1 bunch cilantro chopped
  • 1-2 tbsp vinegar
  • 1-2 tbsp olive oil
  • Salt and pepper to taste

Method
 

  1. Combine black beans, corn, onion, avocado and tomatoes in a large bowl. Add most of the lime juice, cilantro, vinegar, olive oil and salt and pepper. Stir gently to combine, and taste with a tortilla chip. Add more lime, cilantro, oil, vinegar, and salt and pepper to taste.

Notes

I never measure any of the ingredients- I start with all of the vegetables, and add everything else and taste as I go. I am always very generous with the lime and salt!
